Devil's Queso

  • 1 tbsp butter
  • 1 tsbp olive oil
  • 1 sweet yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can green chilies, diced
  • 4 roma tomatoes, diced
  • 1 large brick Velvetta Cheese, cut into cubes
  • 1/2 cup half-n-half
  • tortilla chips, for serving

1. In a large saute pan, over medium heat butter and olive oil. Add onions and a pinch of salt, saute until translucent. Add garlic, green chilies and tomatoes and continue sauteeing.

2. Reduce heat to low. Slowly add Velvetta cheese cubes a few a time, stirring constantly. As soon as one those melt, add a few more. Add half-n-half and stir until well combined. Keep warm and serve with tortilla chips.
